Hearty Potato Salad – Healthy Option

Our lightened up version of hearty potato salad is full of flavor and texture–you’ll never miss the extra fat and calories. This is your go-to summer side!

The Backstory: Did you know that everyone’s favorite summer side dish is often loaded down with spoonfuls of sugar (yes, sugar!) gobs of oil, full-fat mayonnaise and other high-fat, unhealthy ingredients?  Who can even taste the potatoes when they’re buried in so many other things? Hearty Potato Salad - Healthy Option

This potato salad is the perfect side dish for sandwiches, wraps, burgers or hot dogs. It tastes just like your favorite deli potato salad but isn't drenched in heavy mayo or dressing.

Cook Time 15 minutes

Servings 4 servings

Ingredients

  • 1 pound red potatoes, unpeeled
  • 3 tbsp. onions, chopped
  • 3 tbsp. light mayonnaise
  • 1 tbsp. dried parsley
  • 1/8 tsp. pepper
  • 1/4 tsp. Salt

Instructions

  1. Place potatoes in a saucepan and add just enough water to cover. Bring to a boil. Reduce heat and simmer 10 minutes or until potatoes are tender. Drain and cool under refrigeration.
  2. Chop the potatoes. Add the onions, mayonnaise, parsley, pepper, and salt to the potatoes and toss.
