Hearty Potato Salad - Healthy Option
Ingredients
- 1 pound red potatoes, unpeeled
- 3 tbsp. onions, chopped
- 3 tbsp. light mayonnaise
- 1 tbsp. dried parsley
- 1/8 tsp. pepper
- 1/4 tsp. Salt
Instructions

Place potatoes in a saucepan and add just enough water to cover. Bring to a boil. Reduce heat and simmer 10 minutes or until potatoes are tender. Drain and cool under refrigeration.

Chop the potatoes. Add the onions, mayonnaise, parsley, pepper, and salt to the potatoes and toss.
