The Backstory: This creamy, crunchy, and naturally sweet breakfast parfait is a healthful (and delicious) start to your day. It’s also full of vitamins, minerals, calcium, and antioxidants that you can feel good about giving to yourself and your kids. Yes, kids. Kids love digging into this fun presentation of what looks like a sundae and finding all the good things in the parfait. It’s tasty, crunchy, sweet, and just plain good. I also like to serve these when I’m making a buffet brunch. The parfaits look beautiful on my table and guests can just pick up a glass and go. Breakfast Parfait - Healthy Option
- 1 1/2 quarts fresh strawberries, hulled and chopped
- 1/3 cup strawberry jam
- 1 1/2 quarts Greek vanilla low-fat yogurt
- 2 cups meusli
- 3/4 cups fresh blueberries
Add jam to strawberries and toss.
Assemble each parfait as follows: Place 2 oz strawberries on bottom of parfait glass. Then top in the following order with: - 3 Tbsp. yogurt - 1/3 cup meusli - 3 Tbsp. yogurt - 2 oz strawberries - 2 Tbsp. yogurt - 2 oz strawberries - 1 oz blueberries
