Our breakfast parfait is creamy, crunchy, sweet, and tart…what more does anyone need to start their day?

The Backstory: This creamy, crunchy, and naturally sweet breakfast parfait is a healthful (and delicious) start to your day. It’s also full of vitamins, minerals, calcium, and antioxidants that you can feel good about giving to yourself and your kids. Yes, kids. Kids love digging into this fun presentation of what looks like a sundae and finding all the good things in the parfait. It’s tasty, crunchy, sweet, and just plain good. I also like to serve these when I’m making a buffet brunch. The parfaits look beautiful on my table and guests can just pick up a glass and go. I can also prepare them early and have them chilling in my refrigerator. Easy prep, delicious foods, and happy guests. What could be better than that? More of the Backstory after the recipe

Breakfast Parfait - Healthy Option

The gorgeous parfaits are just as delicious to eat as they are to look at. Creamy Greek yogurt, meusli, and fresh berries are layered to form a naturally sweet and crunchy breakfast (or brunch) dish that's perfect every time.
Course Breakfast, Brunch
Prep Time 10 minutes
Total Time 10 minutes
Servings 6 servings

Ingredients

  • 1 1/2 quarts fresh strawberries, hulled and chopped
  • 1/3 cup strawberry jam
  • 1 1/2 quarts Greek vanilla low-fat yogurt
  • 2 cups meusli
  • 3/4 cups fresh blueberries

Instructions

  1. Add jam to strawberries and toss.
  2. Assemble each parfait as follows: Place 2 oz strawberries on bottom of parfait glass. Then top in the following order with: - 3 Tbsp. yogurt - 1/3 cup meusli - 3 Tbsp. yogurt - 2 oz strawberries - 2 Tbsp. yogurt - 2 oz strawberries - 1 oz blueberries
