All of us love to indulge now and then and there’s no reason we shouldn’t be able to enjoy a sweet treat without feeling guilty about it. My recipe for Banana Walnut Bread is a deliciously healthy way to have your cake and not feel guilty about it. My recipe is low in refined sugars and saturated fat, but all you’ll taste is the natural sweetness of the ripe bananas and the nuttiness of the walnuts satisfying your sweet tooth. Banana Walnut Bread - Healthy Option

Naturally sweet bananas and rich nutty walnuts add layers of flavor to this delicious bread. Enjoy it with a cup of coffee or tea or anytime you feel like a little something indulgent. This is also a wonderful gift to give at the holidays or as a hostess gift, wrapped in parchment and tied with a pretty holiday ribbon.

Cook Time 45 minutes
Total Time 1 hour
Servings 12 servings

Ingredients

  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 large ripe bananas, 10 oz. each
  • 1 whole egg, large
  • 1 tsp. vanilla extract
  • 2 tbsp. canola oil
  • 1/2 cup sugar
  • 3/4 cup all-purpose white flour
  • 3/4 cup whole wheat flour
  • 1/3 cup shelled, chopped walnuts

Instructions

  1. Mix together first five ingredients. Beat on low speed until just combined.
  2. Add in remaining ingredients and mix for about 1 minute until blended through. Do not over mix.
  3. Place batter in a non-stick 8 x 4 loaf pan.
  4. Bake at 350 degrees for about 45 minutes until cooked through.
