Apple Cranberry Cobbler – Healthy Option

Fall fruits and warm cinnamon combine in this classic but lighter version of apple cranberry cobbler. Be ready to swoon.

Apple Cranberry Cobbler - Healthy Option

This delicious dessert is naturally sweetened from the fresh apples and extra delicious from the mouth-watering sauce made from the whole and dried cranberries. The brown sugar crumb topping just puts it over the edge!

Servings 6 servings

Ingredients

For the Apple Cranberry Base

  • 3/4 lb fresh apples, peeled, cored and chopped
  • 2 cups whole berry cranberry sauce
  • 1/4 cup dried cranberries
  • 1 tbsp. lemon juice
  • 1/8 cup all-purpose white flour

For the Topping

  • 2 1/2 tbsp. all-purpose white flour
  • 2/3 cup whole wheat flour
  • 1/3 cup brown sugar
  • 1/3 cup margarine, soft/tub, zero trans fat

Instructions

  1. Combine apples, cranberry sauce, dried cranberries, lemon juice and first amount of flour (amount indicated for apple cranberry base only). Pour into non-stick baking pan (or one sprayed with non-stick spray).
  2. In bowl, combine second amounts of flour (one indicated for the topping), along with the brown sugar. Cut in margarine with pastry blender until crumbly.
  3. Sprinkle over apple cranberry base mixture. Bake at 350 degrees for 50-55 minutes or until fruit is tender and top is slightly browned.
