The Backstory: Happy face pancakes with berries are another healthy and fun, kid-friendly meal. Even though we think of pancakes as a breakfast food, this can be eaten any time of the day or night. Think breakfast for dinner. My grandchildren love pancakes and they also like to decorate them. So, place a bowl of mixed berries on the table and let them go crazy coming up with their own design. They could even turn this into a contest. Kids like to compete and it can stir their imagination. As a parent, good luck, if you have to judge their efforts. Happy Face Pancakes with Berries

Hot, sweet smelling pancakes with cold berries is a delicious treat. Add some juice or milk and the meal is complete.

Total Time 15 minutes
Servings 4 servings

Ingredients

  • 1 box frozen pancakes or make them from scratch
  • 1 cup fresh strawberries, sliced thick
  • 1 banana, cut into slices
  • 1/4 cup blackberries or blueberries
  • 1+ tbsp. squeezable chocolate syrup

Instructions

  1. Follow frozen pancake directions. Allow 3 pancakes per child. Put 3 on each plate. Surround them with 10 pieces of strawberries, each. With the points facing outward.
  2. Put 2 slices of banana for the eyes, Put a blackberry (or blueberry) in the center of each to look like eyes and one for the nose. Squeeze chocolate syrup to make a mouth.
