Kosher Egg and Bacon Bits Sandwich

Our Kosher egg and bacon bits sandwich is a savory bite that’s perfect for breakfast, lunch, or brunch. It’s even better on a bagel!

The Backstory: Sandwiches are something that I love to prepare for lunch.  One of my favorites is our Kosher egg and bacon bits sandwich. It’s hearty, filling, savory, and has just enough chew and crunch to keep me satisfied until dinner. Add a slice of tomato and you’ve got yourself a real meal! More of the Backstory after the recipe

Kosher Bacon Bits Sandwich

These savory and crunchy morsels brighten up this classic breakfast sandwich and turn it into something special.

Ingredients

  • 2 slices bread toasted (or a bagel) of your choice
  • 4 pieces salad greens of your choice
  • 1+ tbsp. lite mayonnaise
  • 2 tbsp. Kosher bacon bits I use McCormicks Bac'n Pieces (chips)
  • 2 thick slices tomatoes
  • 2 eggs optional or hard boiled and chopped or scrambled
  • Kosher salt and black pepper to taste

Instructions

  1. Toast bread and spread with mayonnaise. Top with crisp lettuce leaves and eggs. Add the bacon bits and sliced tomatoes. Season with salt and pepper. Top with remaining slice of bread. Slice in half. Serve with pickles, maybe some chips, a beverage and enjoy.

…The Backstory continues: This easy-to-make sandwich is perfect on toast, a crispy bagel (sounds sacrilegious, I know, I know), and even on fresh challah. Is this so terrible of me? I must admit, for most of my life, I had not used bacon bits and only discovered it when I was in Weight Watchers. Who knew?  Since then I have use this crunchy morsel in my spinach salad and any time I want to enhance the flavor of different meals. I even have sauteed them with onions and peppers. But back to this delicious breakfast sandwich…

Add a sliced tomato, some wilted spinach, anything you like t make it your own. This is truly a delicious and easy recipe and one that I promise you’ll have fun making and enhancing with your own personal preferences. Enjoy!
