Moroccan Fig, Pine Nut, and Black Bean Couscous
Ingredients
- 3 cups vegetable broth
- 2 cups dry instant couscous
- 2 tsp. canola oil
- 1/4 cup onions, diced
- 1 tsp. fresh minced garlic
- 1/4 cup dried figs, chopped
- 1/4 cup pine nuts
- 1 1/2 cups cooked canned black beans, rinsed and well-drained
Instructions

Bring vegetable broth to a boil and add couscous. Cover pot and remove from heat. Let stand, covered for 5 minutes. Fluff with a fork. Put aside.

Heat oil in a non-stick fry pan and saute the onions and garlic.

Add the sauteed mix to the couscous, and then toss in the diced figs, pine nuts, and black beans.
