Moroccan Fig, Pine Nut, and Black Bean Couscous
This flavorful side dish has a little bit of everything: from the rich, chewy figs to the crunch pine nuts and savory black beans! It's a perfect side for chicken, fish, meat or even as a light lunch.

fresh minced garlic

dried figs, chopped

cooked canned black beans, rinsed and well-drained

Bring vegetable broth to a boil and add couscous. Cover pot and remove from heat. Let stand, covered for 5 minutes. Fluff with a fork. Put aside.

Heat oil in a non-stick fry pan and saute the onions and garlic.

Add the sauteed mix to the couscous, and then toss in the diced figs, pine nuts, and black beans.
