Couscous with spinach, onions and tomatoes is simply fresh and flavorful. This is a perfect side, light lunch (add protein!) and go-to all year round.

As always, my mantra has always been that everything in moderation is perfectly acceptable, but in the fast food/food court world in which many of us live, the portion sizes for pastas and rice are so great, that I don’t often recommend them unless you are doing the cooking yourself. Couscous with Spinach, Onions and Tomatoes
Ingredients
- 1 tbsp garlic infused olive oil*
- 1/2 medium onion, chopped
- 3 cups chicken broth
- 1 10 oz. package frozen chopped spinach (thawed, well-drained)
- 2 cups instant couscous
- 2 tbsp. Parmesan cheese, grated
- 1 tbsp. lemon juice
- 1/4 tsp. Salt
- 1/8 tsp. pepper
- 3 cups tomatoes, choppes
Instructions

Heat olive oil in a saucepan. Add onions and cook until softened.

Add the broth and spinach. Bring to a boil.

Add in the couscous and stir to combine.

Remove pan from heat, cover and let stand for 5 minutes or until liquid is absorbed.

Toss in remaining ingredients.

* Garlic infused olive oil can be substituted with 1 tbsp. olive or canola oil plus 1 tsp. fresh minced garlic.
