Greek Yogurt Parfaits

Healthy and delicious, Greek yogurt parfaits can jumpstart your day, (or wellness resolutions!) and are a delicious, anytime snack.

The Backstory: Yogurt has long held a place in Jewish cuisine, most notably during Shavuot, when we celebrate the day that God gave the Torah to the Jews. On the first day of Shavuout, Jews turn to a dairy diet (bring on the blintzes and yogurt-based dishes, people!). Why do we eat dairy on Shavuot? Good question. I did a little research and it turns out that no one quite knows for sure, but there are several suggestions out there including  this one. More of the Backstory after the recipe

Greek Yogurt Parfaits

Creamy Greek yogurt is layered with tangy fresh berries for a gorgeous to look at--and good for your breakfast and brunch treat. Top with almonds for a crunchy, added surprise.

Total Time 5 minutes
Servings 6 servings

Ingredients

  • 1 cup fresh rasbperries
  • 1 cup fresh blueberries
  • 1/2 cup granola, any flavor (your choice)
  • 1/4 cup slivered almonds (optional)
  • 1 32 oz container Dannon LIght and Fit Green Vanilla Yogurt (this is my preferred brand; choose any brand you like!)

Instructions

  1. Take 4-6 wide parfait, dessert, brandy, or other wide glass and fill approximately 1/3 up with Greek yogurt. Add one layer of raspberries. (as pictured), and 2 tbsp. of granola. Top with a layer of blueberries.
  2. Add a second layer of Greek yogurt. Add a tbsp. of slivered almonds and top with remaining fruit. Serve immediately.

…The Backstory continues: There is a line in Shir HaShirim (The Song of Songs, verse 4:11 that says) “…honey and milk are under your tongue” and many people interpret this as comparing the Torah to the sweetness of milk and honey. Considering how significantly food plays into Jewish holidays, it’s possible that this makes as much sense as any other interpretation.

But back to the yogurt…and the Greek Yogurt Parfaits!

Yogurt has long been a staple in Israeli cuisine, most notably as a common Kibbutz food, as an ingredient used to make popular eggplant salads, and many Israeli children start their mornings with with thick, creamy Greek yogurt at their breakfast table.

My husband and nine-year-old son are Greek yogurt parfait junkies, and we go through so much Greek yogurt at our house, that I decided I had to find a way to cram some berries (antioxidant police!) in there as well. This Greek yogurt parfait is the easiest and prettiest, three-minute breakfast you will ever make and it’s absolutely gorgeous enough to set out for company. Plus, you’ll feel wonderfully (Supermom) good about doing something healthy for your family. What more could you ask for?
