Date Nut Squares

Dense, rich, nutty, and chewy are just a few words to describe our finger-licking date nut squares. They’re easy-to-make and bake in less than 30 minutes.

The Backstory: My friend Dini told me these date nut square are one of her favorite desserts and I can totally understand why. They are loaded with naturally sweet and delicious ingredients and completely addicting. Dini has been kind enough to share many of her recipes with me. This smart, spunky and very wise women hails from Canada. She was raised in an Orthodox Jewish home. She migrated to the States in 1946, yet, her ties to her home country remain strong. She visits often, as not all of her siblings followed her here. Strictly, family-oriented, she is a proud grandmother and great grandmother.  Even though she adheres to her traditional ways, she also was determined to keep up on new ideas. When she recently told me her age, I was shocked, I thought she was years younger then she is. She will be 95 years young in December. Yes, she stills drives. Date Nut Squares

These squares are so easy to make. But the best part is that they are delicious. The sweetness of the dates and the crunchy nuts are a perfect blend. Serve with a glass of cold milk and enjoy this snack.

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes
Servings 9 servings

Ingredients

  • 3/4 cup all purpose flour sifted
  • 3/4 cup sugar
  • 3/4 tsp. baking powder
  • 1/8 tsp. Kosher salt
  • 1/2 cup oil
  • 3 eggs
  • 1 tsp. vanilla
  • 1 cup dates, cut in small pieces
  • 1 cup chopped walnuts or nuts of your choice

Instructions

  1. Preheat oven to 350 degrees. Line a 9 inch pan with aluminum foil.
  2. Sift the flour, sugar, baking powder and salt. Make a well add the eggs, oil and vanilla. Mix all until smooth. Add the dates and the nuts. Combine.
  3. Pour into pan and bake for 25-30 minutes. Remove from oven. When the squares are still warm, (not hot), cut into squares, and serve.
  4. These squares also freeze well. Wrap individually in wax paper and store in a plastic bag.
