Enlightened Berry Cheesecake – Healthy Option

You can have your cake and not feel guilty about it with our scrumptious enlightened berry cheesecake. It takes just like the real thing!

The Backstory: Cheesecake is always one of those desserts that people think they can’t have because it’s so rich and decadent, but my Enlightened version of this classic dessert takes all the guilt out of enjoying it. You’ll love having your cake, knowing that this lightened up recipe that doesn’t skimp on taste one bit, even though it does have less saturated fat and calories than most cheesecakes. But all you’ll notice is how fresh, creamy and wonderful every bite is, which is exactly what dessert is all about. More of the Backstory after the recipe

Enlightened Berry Cheesecake - Healthy Option

This shows-stopper dessert is luscious, creamy, and as tasty to eat as it is gorgeous to look at. The cheesecake is creamy and light and the fresh fruit topping and strawberry glaze put it right over the top.

Ingredients

For the Crust

  • 3/4 cup graham cracker crumbs
  • 2 tbsp. margarine

For the Filling

  • 1 1/2 lbs. fat-free cream cheese
  • 3/4 cup sugar
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. lemon extract
  • 3 large fresh whole eggs

For the Topping

  • 1/2 cup fresh blueberries
  • 1 cup fresh sliced strawberries
  • 1/2 cup fresh raspberries
  • 1/4 cup melted strawberry jelly

Instructions

  1. Spray a 9-inch pie pan with non-stick cooking spray.
  2. Melt margarine and mix with graham cracker crumbs.
  3. Press on bottom of pie pan. Set aside.
  4. Beat cream cheese, sugar, vanilla and lemon extracts, and eggs together until blended.
  5. Pour cream cheese mixture on top of graham cracker crumb bottom.
  6. Bake at 300 degrees for 45-50 minutes or until center is set. Refrigerate for 3-4 hours or overnight.
  7. Top with fruit. Drizzle with melted jelly.
  8. Slice cake into 10 portions and serve.
