Poached pears in fruit juice is an elegant ending to any holiday or Shabbat meal and it takes only minutes to make.
The Backstory: This delicious dessert is a perfect choice for the High Holidays, a special occasion, or anytime you want something sweet, but don’t want to indulge in anything too rich or too high in calories or refined sugars. Remember, the idea is to be able to enjoy desserts in moderation and these mouth-watering juicy pears with fruit juice and fresh raspberries or blueberries (with my scrumptious sauce) are a perfect way to do so. Poached Pears in Fruit Juice - Healthy Option
Ingredients
- 4 cups medium pears, peeled and sliced approx. 4-5 medium pears
- 2 tbsp. lemon juice
- 2 tbsp. orange juice
- 2 tbsp. sugar
- 1 tbsp. grated orange rind
- 1/2 cup 100% cranberry juice
- 2 tbsp. sherry can be substituted with sweet wine or cranberry juice
- 1 tbsp. cornstarch
- 1 tbsp. water
- 1 cup fresh blueberries and/or raspberries
Instructions

Place pears, lemon juice and orange juice in a saucepan and cook for 4-5 minutes while stirring.

Add sugar, orange rind, and cranberry juice. Bring to a boil and cook for 4-5 minutes or until pears are slightly tender, while continuing to stir.

Add sherry and bring back to a boil.

Mix cornstarch and water to make a paste and gradually add to the boiling mixture until thickened.

Mix in the berries and stir gently. Spoon into parfait glasses. Serve hot or cold.
