Marinated Cucumber Salad - Healthy Option
Ingredients
- 5 cups (3 medium) cucumbers, sliced
- 1/4 cup green onions, chopped
- 1/2 cup seasoned rice wine vinegar
- 1 tbsp. sugar
- 2 tbsp. fresh cilantro,finely chopped (optional)
Instructions

Toss cucumbers with onions and set aside.

Mix vinegar and sugar together and pour over cucumber mixture.

Marinate for 30 minutes under refrigeration.

Sprinkle with chopped cilantro and serve.
