Broiled Halibut (or Salmon) with Garlic and Tarragon
Ingredients
- 1 17g package GOOD SEASONS Zesty Italian Salad Dressing and Recipe Mix
- 1/3 cup water
- 1/4 cup vinegar
- 1/4 cup olive oil
- 1 tbsp. fresh minced garlic
- 1 1/4 lbs. raw boneless halibut or salmon filets (4 -5 oz. filets)
- 2 tbsp. fresh tarragon, chopped or 2 tbsp. dried
- 1 lemon, sliced
Instructions

Mix together the Italian dressing mix with the water, vinegar, oil and garlic. NOTE: Fran's Time Saving Suggestion: Substitute the first 5 ingredients with 1 cup of any light or fat- free Italian dressing.

Add to the halibut and marinate under refrigeration for at least 20 minutes or up to 6-8 hours for added flavor.

Broil, turning once until desired doneness. Discard any remaining marinade.

Sprinkle with remaining tarragon.

Serve with lemon slices.

…The Backstory continues: Fish can be absolutely scrumptious (and it should be as it’s truly one of the most delicious, natural foods we have to work with), but it should be prepared with equally delicious marinades, seasonings, and attention to detail. This recipe takes halibut (or salmon) and marinates it in a zesty mixture of herbs and seasonings and broils it quickly, and then tops it off with a sprinkling of one of my favorite herbs: tarragon. If you’ve never tried tarragon, you’re in for a treat. This herb has a light licorice-like flavor and it does the most wonderful things to fish and salads. This is fish the way is should be: fresh, interesting, flavorful, and fun.
