Moroccan Fig, Pine Nut, and Black Bean Couscous

This flavorful side dish has a little bit of everything: from the rich, chewy figs to the crunch pine nuts and savory black beans! It's a perfect side for chicken, fish, meat or even as a light lunch.

Ingredients

  • 3 cups vegetable broth
  • 2 cups dry instant couscous
  • 2 tsp. canola oil
  • 1/4 cup onions, diced
  • 1 tsp. fresh minced garlic
  • 1/4 cup dried figs, chopped
  • 1/4 cup pine nuts
  • 1 1/2 cups cooked canned black beans, rinsed and well-drained

Instructions

  1. Bring vegetable broth to a boil and add couscous. Cover pot and remove from heat. Let stand, covered for 5 minutes. Fluff with a fork. Put aside.
  2. Heat oil in a non-stick fry pan and saute the onions and garlic.
  3. Add the sauteed mix to the couscous, and then toss in the diced figs, pine nuts, and black beans.
