Cubed Steak (Swiss Steak)

This is one of the heartiest and tastiest meals you can prepare. It also is very pleasing to the eye. What with all the different colors of the peppers, onions and herbs. Serve this with crusty bread and rice, noodles or mashed potatoes.

Ingredients

  • 2+ lbs. Kosher cubed or swiss steak
  • 3-4 tbsp. oil
  • 1/2 cup all-purpose flour
  • 2 large sweet onions cut in rings
  • 2 large peppers cut into 1/2 inch strips use green, orange and yellow peppers
  • 2 14.5 oz. cans of diced tomatoes. or stewed tomatoes
  • 1/2 tsp. Kosher salt
  • 1/2 tsp. freshly ground black pepper
  • 1 tbsp. fresh chopped parsley
  • 1 tbsp. fresh chopped dill optional

Instructions

  1. Add salt and pepper to flour. Coat steak with the flour. Shake off excess flour. Set aside.
  2. In large skillet, heat oil on medium heat. Saute onions and peppers until soft, about 5 minutes. but not brown. Remove the saute mixture from the skillet. Set aside.
  3. If more oil is needed, add a small amount to the pan. Place steak in pan and brown on both sides.
  4. Add the peppers, onions, tomatoes, parsley and dill to the steak. Cover and cook on low to medium heat.
  5. Check often to make sure steak does not stick to skillet. You may have to add a little bit of water, Cook for about 1 hour. Check to see if meat is soft, cut off a small piece to taste. If not cook for a few minutes more. Most of the time, however, the meat is so tender that the meat does fall apart.
