My Fast and Favorite Chicken Salad

This classic chicken salad is perfect on a sandwich, bed of lettuce or in a wrap. It's simple comfort food that will remind you of days at an old fashioned lunch counter.

Ingredients

  • 4-6 cups Kosher cooked chicken, skin removed, cut into medium size chunks
  • 3/4+ cup mayonnaise
  • 1-2 tsp. fresh lemon juice
  • 1/2 tsp. Kosher salt
  • 1/4 tsp. black pepper
  • 2+ stalks of celery, peeled and diced

Instructions

  1. Mix the mayonnaise, lemon juice, salt and pepper together. Add the chicken, celery, salt and pepper and combine well. Refrigerate so the flavors can blend together, about 1 hour.
