Poached Pears in Fruit Juice - Healthy Option

100% cranberry juice

sherry
can be substituted with sweet wine or cranberry juice

fresh blueberries and/or raspberries

Place pears, lemon juice and orange juice in a saucepan and cook for 4-5 minutes while stirring.

Add sugar, orange rind, and cranberry juice. Bring to a boil and cook for 4-5 minutes or until pears are slightly tender, while continuing to stir.

Add sherry and bring back to a boil.

Mix cornstarch and water to make a paste and gradually add to the boiling mixture until thickened.

Mix in the berries and stir gently. Spoon into parfait glasses. Serve hot or cold.
