Poached Pears in Fruit Juice - Healthy Option

Ingredients

  • 4 cups medium pears, peeled and sliced approx. 4-5 medium pears
  • 2 tbsp. lemon juice
  • 2 tbsp. orange juice
  • 2 tbsp. sugar
  • 1 tbsp. grated orange rind
  • 1/2 cup 100% cranberry juice
  • 2 tbsp. sherry can be substituted with sweet wine or cranberry juice
  • 1 tbsp. cornstarch
  • 1 tbsp. water
  • 1 cup fresh blueberries and/or raspberries

Instructions

  1. Place pears, lemon juice and orange juice in a saucepan and cook for 4-5 minutes while stirring.
  2. Add sugar, orange rind, and cranberry juice. Bring to a boil and cook for 4-5 minutes or until pears are slightly tender, while continuing to stir.
  3. Add sherry and bring back to a boil.
  4. Mix cornstarch and water to make a paste and gradually add to the boiling mixture until thickened.
  5. Mix in the berries and stir gently. Spoon into parfait glasses. Serve hot or cold.
