Broiled Halibut (or Salmon) with Garlic and Tarragon

This delicious, light, and easy-to-prepare meal is packed with delicious flavors. The zesty marinade is a perfect balance to the hearty fish and the dish gets a final fresh note from sprinkle of fresh tarragon after broiling. This will easily become your go-to fish meal.

Ingredients

  • 1 17g package GOOD SEASONS Zesty Italian Salad Dressing and Recipe Mix
  • 1/3 cup water
  • 1/4 cup vinegar
  • 1/4 cup olive oil
  • 1 tbsp. fresh minced garlic
  • 1 1/4 lbs. raw boneless halibut or salmon filets (4 -5 oz. filets)
  • 2 tbsp. fresh tarragon, chopped or 2 tbsp. dried
  • 1 lemon, sliced

Instructions

  1. Mix together the Italian dressing mix with the water, vinegar, oil and garlic. NOTE: Fran's Time Saving Suggestion: Substitute the first 5 ingredients with 1 cup of any light or fat- free Italian dressing.
  2. Add to the halibut and marinate under refrigeration for at least 20 minutes or up to 6-8 hours for added flavor.
  3. Broil, turning once until desired doneness. Discard any remaining marinade.
  4. Sprinkle with remaining tarragon.
  5. Serve with lemon slices.
