Hearty Potato Salad - Healthy Option

This potato salad is the perfect side dish for sandwiches, wraps, burgers or hot dogs. It tastes just like your favorite deli potato salad but isn't drenched in heavy mayo or dressing.

Ingredients

  • 1 pound red potatoes, unpeeled
  • 3 tbsp. onions, chopped
  • 3 tbsp. light mayonnaise
  • 1 tbsp. dried parsley
  • 1/8 tsp. pepper
  • 1/4 tsp. Salt

Instructions

  1. Place potatoes in a saucepan and add just enough water to cover. Bring to a boil. Reduce heat and simmer 10 minutes or until potatoes are tender. Drain and cool under refrigeration.
  2. Chop the potatoes. Add the onions, mayonnaise, parsley, pepper, and salt to the potatoes and toss.
