Peach Berry Crisp - Healthy Option

This delicious fruit crisp is soft, tender, and juicy underneath a golden crust that just melts in your mouth. This is a perfect dessert to showcase seasonal fruit and berries at their peak of ripeness.

Ingredients

For the Crisp

  • 2 1/4 lbs. fresh peaches, peeled and sliced
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blueberries
  • 1 cup fresh strawberries, sliced

For the Topping

  • 1 cup quick-cooking oats
  • 1 cup brown sugar
  • 1/4 cup all-purpose flour
  • 2 tsp. ground cinnamon
  • 1/4 cup light margarine (50% reduced fat), soft/tub, zero trans fat

Instructions

  1. In a non-stick 9" x 13" baking pan, mix together the peaches, raspberries, blueberries, and strawberries and set aside.
  2. In a separate bowl, mix together the oats, brown sugar, flour and cinnamon. Cut the margarine into the dry mixture with a knife.
  3. Sprinkle mixture over top of fruit.
  4. Bake at 375 degrees for 25-30 minutes until the batter is browned and the filling is very hot and bubbly. Let cool and serve.
