Baked Potatoes with Kosher Bac’n Pieces

Baked Potatoes with Kosher Bac’n pieces is comfort food at its best and this creamy, savory, recipe can be made in 10 minutes or less!

The Backstory: Baked potatoes have been a staple in my home for decades.  I also come from a long line of potato lovers. This vegggie was present at 99% of all meals my mom prepared for her family. Peeling potatoes was a chore that was usually done by me. I don’t remember any of my sisters ever doing this. (I will probably hear from some protesters when they read this.) But my parents kept Kosher and so bacon was never in our home while we were growing up and I don’t think there were any mock bacon items back then. If there were, we didn’t have them. Baked Potatoes with Kosher Bac'n Pieces

This comfort side dish is easy to prepare and is very tasty. There are so many different flavors yet they all work well together. The potato is a little mushy but still dense enough to absorb all that is added to it.

Servings 2 serving

Ingredients

  • 2 large baked potatoes cooked in microwave for 8 minutes
  • 2+ tbsp. McCormick Bac'n Pieces to taste
  • fresh chives, cut in small pieces to taste
  • 2-4 tbsp. sour cream
  • 2 tbsp. butter
  • black pepper to taste
  • Kosher salt to taste

Instructions

  1. Scrub the potatoes and prick each potato with a fork a few times and cook in microwave (place on a paper towel) for about 8 minutes until tender. Turn potato over after 4 minutes and finish cooking. Check to see if potatoes are soft, by piercing them with a toothpick. If not done continue cooking until done.
  2. Remove from microwave and carefully cut each potato in half. Be careful as steam will emerge from potato. Put a half tbsp. of butter on each half and mash it lightly into each half of the potato, scooping up the potato gently to blend in the butter. Add the salt and black pepper to taste. and top with sour cream, bac'n pieces and chives. Serve while hot.
