…The Backstory continues: Fish can be absolutely scrumptious (and it should be as it’s truly one of the most delicious, natural foods we have to work with), but it should be prepared with equally delicious marinades, seasonings, and attention to detail. This recipe takes halibut (or salmon) and marinates it in a zesty mixture of herbs and seasonings and broils it quickly, and then tops it off with a sprinkling of one of my favorite herbs: tarragon. If you’ve never tried tarragon, you’re in for a treat. This herb has a light licorice-like flavor and it does the most wonderful things to fish and salads. This is fish the way is should be: fresh, interesting, flavorful, and fun.Book cover image
